Boozy Cider Cakes
Yesterday I felt it, Meahgan and I went outside after the storm and it was Fall. No humidity, a slight breeze and the sun was peaking through the clouds. We both were shocked because it was humid the morning before the storm and then...It was like the word of summer fell off of the face of the world. I instantly got a hankering for apple cider donuts and chilled apple cider in that moment but didn't have the time to run and grab myself a box from the local orchard. I went on through the day and start craving a harvest dessert even more than I did early. So I decided, to reinvent the cider donut into hard apple cider cake with a peanut butter glaze. Here's how I made it!
: Ingredients :

1 Cup Flour
1 tsp Baking Powder
1/4 tsp Salt
1/3 Cup Sugar
1½ Tbs Butter (melted)
1/3 Cup Hard Apple Cider
: Icing :
1 Can sweetened condensed milk
1/2 cup milk
1 tbs peanut butter
1 tsp nutmeg
Tsp of flour
: Recipe :
Step 1: Preheat your oven to 325
Step 2: Mix together your dry ingredients ( Flour, baking powder, salt, and sugar) until well combined. Set aside
Step 3: In separate bowl add your melted butter ( cooled ) and your egg and whisk until combined
Step 4: Pour in apple cider to wet mixture and mix.
Step 5: Slowly incorporate wet mixture into dry mixture.
Step 6: Put dough into a piping bag
Step 7: Grab a cookie sheet and spray with non stick spray.
Step 8: Pipe cakes into a circular formation.
Step 9: Put into oven for 12-13 minutes until light and fluffy.
: Icing :
Step 1: Grab a small saucepan and set the heat to medium
Step 2: In a small saucepan add all of your ingredients except the vanilla
Step 3: Let reduce for 10 minutes until it becomes thick
Step 4: Take off the heat and add your vanilla
Step 5: Let cool
: Finishing touches :
When cookies and icing are both cooled dip tops in and take out and let stand until the glaze is set and enjoy!
